"We decided to do something new with Gin. As always, we did not want to settle for an ordinary gin. During a conversation between Michael Scheibel and his English teacher from the Philippines, the subject of gin was also discussed. Anthony said gin in the Philippines is always refined with the rare calamansi fruit, a cross between lime and kumquats. We have taken up this idea and have immediately started to search for this fruit. The fruit markets in Germany as well as in Paris could not supply us with this fruit. So we went directly to search in the Philippines and found it. In the south of the country we found a small trader who wanted to sell us the fruits in fresh condition. The transport of fresh fruits, packed in sacks, was tedious. First a domestic flight to Manila and from there to Frankfurt and then to Kappelrodeck. The transport costs were extremely high - but it worked. The juice of the Calamansi fruit forms the basis for this refreshing liqueur. The gin is the alcoholic base and is rounded off with a tonic extract. "
